The Chef’s Journey
Chef Denis Mukhin, born and raised in Novorossiysk in southern Russia — a region nestled between the Caucasus Mountains and the shores of the Black Sea — has devoted over 30 years to the pursuit of culinary excellence.
Driven by a desire to present Russian culinary culture in its broadest sense — embracing the diverse flavors of peoples across the post-Soviet space — he brings this rich heritage to Vietnam for his compatriots, international guests, and especially for Vietnamese who once lived, studied, and worked in Russia and the USSR.
More than a dining experience, it is a journey of memory, connection, and cultural exchange. This vision ultimately inspired the creation of Vinegrette.
Vinegrette” is the name of a well-known Russian salad, made from a variety of vegetables and legumes, dressed with vinaigrette — a classic preparation that inspired the name of this iconic dish.
Beyond its origin, Vinegrette also represents the art of combination — a harmonious blend of diverse elements. This spirit is reflected in every aspect of our restaurant: from style and atmosphere to the menu, where familiar ingredients of Russian cuisine are thoughtfully paired with local products and traditions, creating an experience that feels both comforting and new.
